Craig F. Owings –
I’m sort of a knife snob. I have quite a few knives of all sorts, and my wife thinks I have far more than I need. I, however, don’t consider “need” to be a criterion that has to be met before making a knife purchase.
With almost all the knives I’ve acquired, the first thing I do when I receive them is to hone the blade so that it meets my high standard of sharpness. Not this one. Its “as received” sharpness is impressive. No doubt that’s due to the use of fairly good steel (X70Cr17Mo, which is a Japanese steel roughly equivalent to the American 440A) and a sixteen-degree edge. That narrow-angle edge provides great cutting, but–due to the use of X70Cr17Mo steel–will not hold the edge as well as some of the “super steel” alloys. However, that also means that it is less expensive, and can be re-sharpened more easily, than those exotic alloys (but less easily than softer, non-stainless types). Just be sure that your sharpener will produce a sixteen-degree edge. If your sharpener produces a wider-angle edge, the blade will still be sharp, but not quite as sharp as it was originally.
The handle is G10, which is a high-grade material. Personally, however, I think that the handle shape is more a modernistic element than it is something designed for comfort. Nonetheless, the angular shape of the handle is not uncomfortable.
The included case is not something for which I have any use. I don’t want to have to unzip a case and carefully remove the knife before I want to cut something. Your preferences may vary, and it does work well as something to hold the knife if you are giving it as a gift.
I like this knife at this price, and recommend it as a general-utility knife.

This Aihomo has immediately taken the top spot as my favorite utility knife. It has a nice heft and good balance. The handle is comfortable to both my husband and me – and that’s a biggish difference in hand size. The blade is wonderfully sharp. Dicing bacon and halving brussels sprouts gave easy and clean results. The blade was easy to rinse clean. The titanium coating on the blade does provide some non-stick quality. The steel used is hard and hard steel needs to be treated kindly as it can chip and/or break more easily than a softer steel. I am hoping that the edge holds up well and that that the knife doesn’t need sharpening often. The case gives great protection, but it’s large and the knife will live in one of my knife blocks (‘upside down’ – with the edge up) since it is a high use tool.

This is such a great knife with versatile uses. It’s extremely sharp and well balanced. It’s perfect for a pairing knife such as small fruits and vegetables as well and trimming meats. Feels great in the hand and well balanced. The case is first class as well.

This is a beautifully balanced small knife; it’s halfway between a paring knife and a chef’s knife, and it definitely punches above its weight class. I have collected a large and diverse collection of kitchen knives, from the Henckels knives my husband brought me from Germany, to Sabatiers and Wusthofs I have purchased for myself. This is one of the nicest knives I’ve ever seen or used.
The smooth handle is solid and substantial in your hand. The edge is clean and sharp and I have the strong feeling it’s about to become my go-to knife for all small cutting jobs.

It’s a razor-sharp utility knife, and I hope to maintain its sharpness in the future. The handle is well-balanced and seems comfortable in my hand. It’s a real bargain for the price and would make a good Christmas gift.

When I saw this knife, I wondered if it was as sharp as described. I have several knives to sharpen before using them. Otherwise, they just don’t cut the mustard. I needed to cut up some veggies in a new recipe. I grabbed an onion and started chopping; it cut through the onion like butter. I had to be careful; I’d likely lose a finger if I weren’t. The knife is incredibly sharp, and as cautious as I was, I still wound up cutting myself, not severely, but the blade was so sharp I didn’t even feel it. Regardless, I still love it and can’t wait to use it on something challenging, like a London Broil that has to be cut extremely thin against the grain to offset the tough cut of meat. It’s a great knife. I love that it’s got some length to it, unlike a smaller paring knife. I hope it has an excellent long life; it’s new, so its durability has yet to be discovered. I’ll update this review if it disappoints.

The case is great, will make transporting very safe.
The knife came sharp and the handle feels really nice to use. I was surprised because the odd angles on the handle made it look uncomfortable in the pics.
This more of an inlongated pairing knife. Will be great for delicate work.
